On the ground floor of Hotel 1899 Tokyo, a property built entirely around tea, CHAYA works as a neighbourhood teahouse for the Shimbashi-Onarimon backstreets. Staff here are called tea baristas, and the signature Rich Matcha Latte lets you set the dose, roughly three to six grams of stone-milled tencha, with the whisking done in front of you; four grams is the house recommendation. Beyond matcha there is hojicha, sencha, Japanese black tea, tea sodas and even matcha beer, plus matcha bread, tea gelato and a full food menu. Its 36 seats are first-come only, and the cafe runs a monthly Japanese tea seminar.
