Hiiragi occupies a back street behind GINZA SIX as a curated Japanese sweets shop with a six-seat hinoki counter tucked inside. The draw is a kakigori technique that blends premium Uji matcha through the ice itself rather than pouring syrup over the top, so the flavour holds to the last spoonful; it arrives under condensed milk and black-sugar cream. Each item in the matcha-zukushi set, from the shaved ice and latte to the financier and a plum-wine-spiked terrine, uses a different tea leaf, so the set doubles as a tasting. With only six seats and a 10% eat-in service charge, it rewards an off-peak visit.
